YES, we have NO Bananas...

Do you have bananas attracting fruit flies on your counter? Or turning black and slimy in your freezer? Go get them. Go get them right now and make these muffins:

And here's the actual recipe in case the link doesn't work. I doubled the recipe and made 24, because 12 just won't last long enough in this house.



The Best Crumb Top Banana Muffins
1.5 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 bananas, mashed
3/4 c. white sugar
1 egg, lightly beaten
1/3 cup vegetable/canola oil
Topping:
1/3 c. packed brown sugar
2 tbsp flour
1/8 tsp cinnamon
1 tbsp butter
1. Preheat oven to 375*. Lightly grease 12 muffin cups, or line with muffin papers.
2. In a large bowl, mix together flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and oil. Stir banana mixture into flour mixture until just moistened. (I did the banana mix in my KitchenAid mixer , and added the flour mix to it. Worked fine.) Spoon batter into prepared muffin cups.
3. In a small bowl, mix together topping ingredients, cutting in butter until it resembles coarse cornmeal. Sprinkle topping over muffins (don't be skimpy)
4. Bake in preheated oven for 18-20 minutes, until a toothpick inserted into center of a muffin comes out clean.
Makes 12 good sized muffins. DELICIOUS!!!!!!
TRY to wait until they cool somewhat before taste testing. It will not be easy. They smell yummalicious!
